Christmas Morning Breakfast

Our Christmas morning breakfast is one of everyone's favorite meals of the year -- we occasionally have it throughout the year, sometimes.  Every Christmas morning we have a sausage, egg & cheese casserole and a coffee cake -- every year for 25 years now! (maybe even before I was born)

"Breakfast Before Casserole"

Make a day before: (it's usually best to make the night before)
1 pound spicy sausage
6 eggs
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard or a little less
2 slices white bread, cubed
1 cup grated sharp cheddar cheese

Directions:
- Saute' sausage and drain 
- beat eggs with milk
- add salt and mustard
- layer bread cubes, sausage & cheese in 9x13 baking dish 
- pour egg mixture on top
- refrigerate overnight
- bake at 350 degrees for 45 minutes

I was a little late coming over from opening presents so some people had already dug into it by the time I got my piece!

Sour Cream Coffee Cake AKA Christmas Morning Coffee Cake

Ingredients:
1/2 cup butter or margarine
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups sifted flour
1 teaspoon baking powder
1 teaspoon soda
1 teaspoon salt
1 cup sour cream
Topping:
1/2 cup nuts, chopped (optional)
1 cup brown sugar
6 teaspoon flour
2 teaspoon cinnamon
4 teaspoon butter, melted

Directions:
(this can be made the day of or the day before)
- Cream butter, add sugar, eggs and vanilla
- cream until light and fluffy
- add sifted dry ingredients, alternatively with sour cream
- pour half of batter into greased and floured tube pan, sprinkle with half of topping
- spread with remaining batter and the sprinkle with remaining topping
- Bake at 350 degrees for 45-50 minutes
