Soups, Soups, Soups

Since we are at the tail end of winter {most hopefully} I want to share these soups before it's too late!  My favorite soup ever (if your a potato lover, it'll be right up your alley) and two new tries.

On a snow day, freezing day, rainy day even, I feel like soup always is the perfect meal for dinner.  When in a crockpot, even better!  Guess what.. All three of these recipes are easy crockpot go to's!

Potato Soup
People always say "oh I have the best potato soup recipe."  
Well I think this one is the best but I KNOW that it is the easiest.  There's no potatoes to peel!  
You just need a bag of hash browns, saves a ton of time!
30 ounce bag shredded hash browns (bag can be either frozen or refrigerated, both work)
32 ounce box of chicken broth
1 can cream of chicken soup
1 package cream cheese 
3 ounces hormel real bacon bits
1 cup shredded cheddar cheese
Salt and pepper to taste

*might need to get two 20 ounce bags and just use half of one.

Put hash browns in the crockpot 
Add broth, cream of chicken soup and half of the bacon bits with a pinch of salt and pepper
Cook on low for eight hours 
An hour before serving, cut the cream cheese into small cubes and place in the crockpot
Mix the soup a couple times during the last hour
Once the cream cheese is fully mixed in - it's ready!

Top with shredded cheese and bacon bits

Cheesy Chicken Tortilla Soup
I'm kicking myself because somehow I deleted all of my pictures of this one on my phone AND my laptop.  But I still want to share and it's super easy so here goes..

1 pound chicken breast (cubed)
2 cans cheese soup
2 cans cream of chicken soup
2 cups milk
2 cans enchilada sauce 
Crushed tortilla chips
Shredded cheddar cheese 
*we only had one can of cream of chicken soup so per our favorite enchilada recipe, we substituted a can of cream of mushroom instead and it turned out delicious 

Cut the chicken breasts into small cubes.
Combine the chicken with all other ingredients except for the tortilla chips and cheddar cheese.
Cook in crockpot on low for about four hours.
Stir occasionally (can easily burn).
Once time to serve, crush tortilla chips either on the bottom of bowl or on top of soup.
Sprinkle top with cheddar cheese

Hamburger Soup
Confession:  The first time we made this soup it was a disaster.  (See - still learning how to cook)
I put in a few extra noodles because I "thought" there was room.  
Once the noodles expanded, there was not an ounce of broth left.  So we did a do over.
1 lb. hamburger meat (browned)
1/2 can diced tomatoes
Small can tomato sauce
2 cans beef broth
3 cups water
10 baby carrots (chopped)
1/4 cup onion
1-2 cup dry small shells
salt, pepper, garlic to tast

Brown the beef and drain
Chop the tomatoes and onion.  
*We aren't huge onion piece fans but love the taste so I put big chunks into the soup and took them out before time to serve
Put all ingredients (other than dry shells) into crockpot and cook on low for 6 hours.
45 minutes before serving add dry shells to mixture (no sooner because they will get soggy)

  5. Potato soup is seriously the best! I have a recipe as well, but I LOVE finding easy shortcuts. The hashbrowns idea is fantastic. And the cheesy chicken tortilla soup sounds pretty darn good too. YUM! Thanks for sharing at DDT!
