Cinco de Mayo Inspiration

Cinco de Mayo is just one week away and any excuse for Mexican and margaritas works for me.  All the Mexican restaurants are always so crowded and Derek will be headed out of town the next day so I foresee us cooking something easy and light to enjoy at home but I've rounded up some of my inspiration for the holiday below...

  2. I cannot believe it is almost May 5th! Everything you have here looks delicious - I may need to make those skinny enchiladas...and those churro cupcakes, oh my they look good!

  3. YUM to all of this! I forgot that next week is May. We'll be at a wedding the next day so probably won't get to partake in many of the festivities, but hopefully we can get a Mexican food fix in there!

  4. Cinco de Mayo is such a fun excuse for Mexican food and a margarita (or two)! Loving all of this, the blueberry pineapple margaritas look especially delicious!

  18. Cinco De Mayo is one of my favorite holidays! When else is there a really valid excuse to eat all the Mexican food and drink all the margaritas! I hope you try the skinny chicken enchiladas because they are seriously fantastic!

  22. Finn's birthday actually is May 5, so I always try to have a mini fiesta in his honor! I'm currently on the hunt for a miniature sombrero for him to wear long enough to get a picture. :)
